What causes turkey meat defects? Study says it’s in the genes

U.S. researchers have identified differences in gene expression between normal turkey meat and birds that produce pale, soft meat that is considered defective. The meat defect has become more common as turkeys have been selectively bred for rapid growth and greater breast muscle mass in response to high consumer demand, the scientists noted.
